I know the new year is a few weeks away, but it helps to know what you'll need to stock your fridge.

Plus, I won't be sending my weekly emails to you until the new year. Enjoy the holiday season with a bit less clutter in your inbox.

The first day of January is special all over the world. Starting a new year gives us a new beginning with the desire for a bountiful year ahead.

In my blog post, I explain where and how this tradition started.

I also share some recipes from the internet, but… the gold for success is in the comment section. THANK YOU, JAY, for your valuable tips for succulent, moist results:

  • Use a pork shoulder, specifically a "Boston Butt," usually 7-8 pounds.
  • Brown the meat thoroughly on all sides; do not scrimp on this step as the caramelization on the outside is a critical flavor element.
  • Add enough sauerkraut to cover the meat.

I save my less-than-stellar, too-dry, or too-salty batches of sauerkraut for the rare times in which I cook it.

And...

I always serve it with a side of raw sauerkraut. :-)

I remember reading you travel with your fermented krauts. How do you do that, and what are the best ways to do so if flying?
I repack the sauerkraut that I want to take into a freezer Ziploc bag, leaving behind the brine, if any. Then, pack that bag into a second Ziploc freezer bag for good measure. I've done carry-on multiple times with no issues.
